Nutritious and Delicious Rice Salad

This is a delicious and nourishing rice salad which you can make with left over rice and take to work with you or enjoy as a lunch at home or as a side to your main meal.   Remember my motto – cook once eat twice!!

Nutritious and Delicious Rice Salad


1 cup red rice cooked and left to cool

1 large red pepper – diced finely

2 large spring onions sliced

1 bunch of coriander – chopped

6 sundried tomatoes – sliced

1/4 cup toasted pumpkin seeds



Juice of 2 limes

2 tbs sesame oil

1 tbs tamari (a gluten free soy sauce)

1 tsp mirin

1 tsp raw honey

1cm  chunk ginger – peeled

Salt to taste


Combine all of the salad ingredients into a beautiful bowl

Use a hand blender and blitz all the dressing ingredients together and pour over the salad

Serve as a main dish with your choice of protein (shown in picture – garlic and lemon chicken) or try tofu, tuna or goats cheese. Also enjoy as an accompaniment to your main dinner or as part of a dinner party or bbq

Naomi's TIP

Cook the rice ahead of time to give enough time to cool.  Replace the red rice with any other grain.
