Beetcorn Fritters

 

I discovered these in my favourite local cafe, Eat’n mess in Sevenoaks,  As well as delicious gluten free and refined sugar free treats they also completely rock the savoury stuff too.  They serve these (well similar to as I made up this recipe after being inspired by them) with smashed avocado and grilled halloumi – seriously yummy!!  I added coriander and cumin to my fritters to spice them up a little.   How would you eat yours?

Matcha Latte 3 ways

 

A matcha latte is a great way to get an energy boost without the jitters of coffee, even though Matcha contains caffeine and is stimulating it has a calmer effect on the body – Buddhist Monks drink Matcha before they meditate as it helps them remain calm and focused at the same time to enhance their practice. Nutritious and Delicious Rice Salad

 

This is a delicious and nourishing rice salad which you can make with left over rice and take to work with you or enjoy as a lunch at home or as a side to your main meal.   Remember my motto – cook once eat twice!!

Egg Plant Caviar

 

This isn’t really so much a caviar (as it’s vegan!) however a more exciting and sophisticated than Aubergine Mess!   This is a really simple immune boosting recipe which is also hugely beneficial for gut health.

Superfood Power Smoothie

 

I love a good smoothie that really packs a nutritional punch this recipe certainly does that!!  If you have a selection of superfoods in your cupboard then its a great way to incorporate them into one delicious smoothie. Berry Breakfast Tabbouleh

 

Breakfasts don’t need to be dull and you can whip up a super simple delicious recipe in less 10 minutes with nothing more than some left over quinoa!!  Most of the ingredients in this recipe are kitchen staples that you may already have in your kitchen, you can even use frozen fruit if fresh isn’t available. Use the base of this recipe to create your favourites using various other fruits, nuts, milks and superfoods.

Veggie Thai Red Curry

 

I am super excited to share this recipe with you as it’s very simple yet so tasty!  I use a good quality curry paste for ease and variety of seasonal and organic veggies.  Either eat as it is or with rice or quinoa.

Healthy Gingerbread

 

I simply can’t resist gingerbread at Christmas, the warming spices really comfort me on a chilly day and make me feel positively festive in every way. I have swapped out some of the unhealthier ingredients to give them a healthy twist, which in my opinion really works (and judging by the rate that my kids are demolishing them they are a winner with the kids too!)
